Jerk Pasta!


This is a very simple jerk pasta with prawns, you can also substitute the prawns for chicken if you like. You can use any type of pasta you like for this, start off by boiling some water for the pasta, then once the water is boiling add the pasta.


Now you can start on the jerk sauce, take a bunch of parsley, half a yellow onion, some spring onions, one scotch bonnet, some pimento, cinnamon, a splash of vinegar, some lime juice and a few clove of garlic. Blend it all together until smooth.


Then move onto the prawns, wash the prawns with vinegar and lemon juice then remove the veins, chop some onions, spring onions, garlic and chilli along with peppers spinach. Once all your veggies are washed and chopped, heat up some olive oil in a pan and add the onions and garlic, don't let them brown, add some of the jerk sauce you don't want to add too much you don't want it to overpower the dish, mix it in then add your veg the spinach, sweetcorn and peppers and cook for a couple of minutes then add your prawns, and mix it into the jerk sauce with the veggies. Your pasta should be ready by now, save a little of that pasta water. Add the pasta into the pan with the vegetables and the prawns add a little bit of that pasta water in too along with a splash of double cream, you can now add some additional seasoning to the pasta, some salt and pepper, garlic powder, onion powder and all purpose seasoning. You can top off with some Parmesan cheese and some fresh parsley and your dish is ready!


This is a really quick midweek meal which which will take 45 minutes max, also it is a great way to incorporate a lot of vegetables into the dish to ensure you get your five a day and the dish itself is packed with flavour, you can substitute the prawns for chicken or if you want some more protein include both! Once you make the jerk sauce you can also refrigerate it and save it for later. I will list the ingredients down below, you can use your own measurements or follow mine, I made two servings.


Ingredients


For the Jerk sauce:

-handful of parsley

-half a yellow onion

-2 spring onions

-1 scotch bonnet pepper, or half if you don't like spice

-1 tsp ground pimento

-1 tsp ground cinnamon

-2 cloves garlic

-1 tbsp lemon juice

- a splash of white vinegar


For the Pasta

-5/6 large king prawns, (shelled or de-shelled)

-2 portions of pasta (any kind)

-2 ladles of pasta water

-2 handfuls of spinach

-half a bell pepper

-half a cup of frozen sweet corn

-medium yellow onion

-1 chilli

-2 cloves garlic

-a splash of double cream

-half cup Parmesan cheese

- a squeeze of lime

-salt

-pepper

-garlic powder

-onion powder

-all purpose seasoning

-handful of fresh parsley for garnish
